Excellent tomato for sauces!
Amish Paste is the juiciest meatiest paste or Roma type tomato Ive ever grown. Its a great fresh eating tomato and not as thick-skinned as most paste tomatoes. I found no need to skin them when I made sauce.

Organic Amish Paste Tomato – HEIRLOOM Versatile, flavorful, juicy enough for slicing, but meaty enough for cooking down. It has few seeds (can make sauces and pastes bitter.) Vegetable Planting:
Sow seeds indoors before last frost. Plant seeds about 1/4′ under soil surface, then transplant seedlings to garden with 30 – 36′ between plants.
Vegetable Seed Saving:
Allow tomatoes to over-ripen on plants; then collect seeds. Let seeds ferment in the tomato. Clean and dry the seeds before storage in cool dry conditions.
